The Skinny Pancake fights pandemic and opens a new one on Mountain Road in Stowe

STOWE – After a five-month hibernation, Burlington Free Press is relaunching its weekly service as a new place to eat because, damn the pandemic, Vermont’s food and beverage marketers continue to open up new places to feed locals and visitors. The Skinny Pancake is a Vermont legend. Starting with a food cart, the pancake supplier has become a regional empire with its flagship restaurant on the Burlington Boardwalk, as well as Montpelier, Quechee, Sugarbush Resort and Burlington International Airport. (Just before the COVID-19 pandemic hit, The Skinny Pancake closed its location in Hanover, New Hampshire, and has not yet reopened its other Stowe at Spruce Peak.) Yes, Pancake specializes in sweets and savory pancakes, but the place to eat also serves salads, snacks and drinks for adults and for all ages.

The new incarnation of The Skinny Pancake is located on Mountain Road, next to stowe Cinema, in an area that has housed the McCarthy dining place for 4 decades. “We wanted to pay homage to mcCarthy’s breakfast multitude,” said Michael Cyr, marketing director of The Skinny Pancake, so Stowe’s online page added a classic breakfast sandwich.

Also new to the menu is a Korean pancake fried with fish and a roast beef sandwich with cheese from Jasper Hill Farm, founded in Vermont. Cyr said The Skinny Pancake has been based on its vintage menu in recent years. “As we evolve everything,” he says, “we also seek to evolve our menu.” Those who order takeout can enjoy their food at the banks along the Stowe Recreation Trail, located right at the new restaurant.

The Skinny Pancake began painting at the Stowe site before the pandemic repositioned in mid-March. The post at a post in April, however, Pancake had turned to ShiftMeals, a service the company had created to provide food to others in need due to the pandemic.

Cyr said The Skinny Pancake began reopening its restaurants in early June. “The difficult resolution was, ‘Are we opening a new location in this climate?'” he said. “We’re sitting on it, so we open it.”

The business has been “solid” since Stowe’s location began serving consumers on July 11, Cyr said. Guests eat almost exclusively on the terrace, which can accommodate about 32 guests. The seats inside will be for about 70 more people when full capacity is allowed.

Cyr said there were about 20 full-time, part-time workers in Stowe. Across the company, he said, employment figures were reduced to about a hundred workers, still a long way from the full-time, part-time 230s in February.

“It’s wonderful to see our team work,” Says Cyr. “As long as we can keep feeding people, that’s our goal.”
